And who doesn’t love crepes??
We are all about clean and balanced nutrition here at Soul Balance, but the one indulgence for the week is our Balinese Coconut crepes – they are delicious and always a favourite.
Today we are going to give the recipe away to you, for a few reasons…
Firstly to say THANK YOU for spreading the love about our Bali and Melbourne Retreats – 2014 is absolutely reflecting a huge surge in growth for Soul Balance… And we wanted to express how grateful we are to our community.
And secondly, to get you into the visualisation of being here with us, in Bali… treating yourself to a home-made coconut crepe after our cooking class… bliss!

OK so here it is… the secret to BALINESE COCONUT CREPES!
The crepes are prepared first… Once the consistency of the mixture is smooth and whisked, add small amounts to a non-stick pan to create a thin crepe. Leave to cool before adding the filling.
20 grams of brown sugar
80 grams of flour (or almond meal as a healthy alternative)
250ml of almond milk
The filling!!! (my favourite part!) – those that have seen me in this Balinese cooking class will remember my love for roasted coconut… 😉
1 cup of fresh coconut (literally off one of our coconut trees at the Retreat)
1/2 cup of palm sugar (again fresh from the local shop)
1 Pandan leaf – (tip – in Australia I buy the closest thing to this at the asian grocer!)
Place all ingredients into the pan and stir continuously on low heat for 2 mins. Spoon a tablespoon of the filling into the crepes, roll up – and serve with a wedge of a fresh orange! YUM!
